We set up a food stall at the “Oyane Summer Festival 2026”.

On August 20 (Thu) and 21 (Fri), we set up a pop-up shop at the Oyane Hiroba (Grand Roof Plaza) of COREDO Muromachi Terrace under the banner “Shoku no Kai Nihonbashi on Tour presented by &mog.”

The “Oyane Summer Festival 2026” was designed for everyone to enjoy together—from those working in Nihonbashi to visitors and local residents—featuring stalls run by long-established local shops and a nostalgic festival atmosphere.

At the “Shutcho! Shoku no Kai Nihonbashi presented by &mog” booth, following the success of the “Nihonbashi Sakura Yatai,” the team sold items featuring food-tech ingredients alongside classic summer festival treats like *ika-yaki* (grilled squid) and refreshing drinks.
Attendance surpassed last year’s figures, creating a lively atmosphere filled with happy visitors strolling through the venue.

As part of the “Mirai of Gastronomy” initiative, the event also featured two varieties of *jaga-bata* (buttered potatoes) prepared using cutting-edge food-tech ingredients.

By combining “Jaga-bata” (buttered potatoes)—a beloved summer festival street food—with new food technologies, we created an opportunity for people to experience the future of food and products that offer social value.

“Future Soy Sauce & Traditional Bonito Flake Jaga-bata” uses powdered soy sauce from Toy Medical Co., Ltd.’s “Zero Series.” The Zero Series features a seaweed-derived “salt-absorbing fiber” designed to inhibit salt absorption.

“Future Jaga-bata with Cheese and Aonori Seaweed” is topped with “Suji Aonori” (a type of green laver) from Sea Vegetable LLC. This fresh, highly aromatic seaweed is cultivated on land using mineral-rich deep-well seawater.

We also sold the Banana Bread and Impossible Chocolate Chip Cookie from “ovgo Baker,” a shop located in Nihonbashi Kodenmacho—just a short distance from &mog Food Lab.

This is a vegan product made without ingredients such as eggs or butter. Nevertheless, it is a satisfying treat that delivers both substantial volume and a rich, sweet flavor.

At &mog, we will continue to create opportunities for people to experience new possibilities in food—including food tech—within the city through collaborations with a wide range of food products and ingredients.

At “&mog Food Lab,” we support the process of turning ideas into reality through prototyping and development in the kitchen on the 4th floor, and by holding tasting events and providing practical service in the dining area on the 1st floor. It serves as a place for real-world interaction with local residents and visitors, and we are working to create opportunities for products refined at &mog Food Lab to be widely evaluated by the general public.
