“We exhibited at the Food Development Exhibition. From the development site to the city – Food innovation starting with &mog “

&mog Food Lab, developed and operated by Mitsui Fudosan, supports the development of menus and services together with business operators who are responsible for the future of food.

&mog Food Lab’s developed menu and supporting businesses exhibited at the Food Development Exhibition 2025, held at Tokyo Big Sight from October 13th to 15th, 2025. This is one of the largest exhibitions in Japan, bringing together researchers, developers, buyers, and manufacturers from the food industry, and it was a valuable opportunity to introduce the products created by &mog in a place that connects to the actual market.

The exhibitor’s booth offered a tasting menu focused on the functionality, fermentation, and appeal of ingredients developed in the &mog Food Lab’s 4th floor KITCHEN and 1st floor DINING. Visitors commented,
“It wasn’t until I actually tried it that I got a good idea of what it would be like,” and
“I’d like to apply this technology to our own products,”
and many of them came to the event seeking “experience-based development consultations” rather than just armchair discussions.
It was also an opportunity to widely demonstrate to the food industry the process that &mog Food Lab promotes : from the germination of an idea to prototyping, improvement, and urban implementation .

&mog Food Lab supports the process of turning ideas into reality through prototyping and development in the KITCHEN on the 4th floor, and tasting events and practical serving in the DINING on the 1st floor. It is a place that serves as a real point of contact with local residents and visitors, and we are working to create opportunities for the products refined at &mog Food Lab to be widely recognized by the general public.

Mitsui Fudosan will continue to use this facility as a base to consistently support the creation and implementation of food, and promote efforts to connect the city and its people.
